High-Protein Beef Stir-Fry with Low Carbs




Ingredients:

  • Beef Marinade:

    • 1 lb (450g) lean beef (sirloin, flank, or tenderloin), thinly sliced
    • 2 tablespoons soy sauce (low sodium)
    • 1 tablespoon olive oil
    • 1 tablespoon apple cider vinegar
    • 1 teaspoon garlic powder
    • 1 teaspoon ground ginger
    • 1 teaspoon black pepper
  • Stir-Fry:

    • 2 tablespoons olive oil
    • 1 medium bell pepper, thinly sliced
    • 1 medium zucchini, thinly sliced
    • 1 cup broccoli florets
    • 1 cup snap peas
    • 2 cloves garlic, minced
    • 1 tablespoon soy sauce (low sodium)
    • 1 teaspoon sesame oil (optional)
    • 1 teaspoon red pepper flakes (optional)
    • Fresh cilantro for garnish

Instructions:

  1. Marinate the Beef:

    • In a large bowl, combine the soy sauce, olive oil, apple cider vinegar, garlic powder, ground ginger, and black pepper.
    • Add the sliced beef to the marinade and mix well. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  2. Prepare the Vegetables:

    • While the beef is marinating, wash and slice the bell pepper, zucchini, and snap peas. Cut the broccoli into small florets.
    • Mince the garlic.
  3. Cook the Beef:

    • Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat.
    • Add the marinated beef to the skillet in a single layer, cooking in batches if necessary to avoid overcrowding.
    • Stir-fry the beef for about 2-3 minutes per side until browned and cooked through. Remove the beef from the skillet and set aside.
  4. Cook the Vegetables:

    • In the same skillet, add the remaining tablespoon of olive oil.
    • Add the minced garlic and cook for about 30 seconds until fragrant.
    • Add the bell pepper, zucchini, broccoli, and snap peas. Stir-fry the vegetables for about 5-7 minutes until they are tender-crisp.
    • Add the cooked beef back to the skillet with the vegetables.
    • Stir in 1 tablespoon of soy sauce and 1 teaspoon of sesame oil (if using).
    • Add red pepper flakes for a bit of heat (optional).
    • Stir everything together until well combined and heated through.
  5. Serve:

    • Garnish with fresh cilantro.
